Yan Chow Fried Rice
4 cups cold cooked rice
3 eggs
Oil for cooking the eggs
¼ diced BBQ pork
¼ head of Iceberg Lettuce - sliced into ¼” by 2” pieces
¼ lb shrimp, diced
2 oz dry Chinese mushroom soaked until soft, remove tough stem and slice thinly
4 tbsp. soy sauce
4 green onions, diced
Cook the rice preferably the day before. Reserve.
Scramble the eggs or cook as an ordinary omelet in a pan with a little oil. Season eggs
with salt and pepper to taste. Remove from the fire and keep warm.
Stir fry the BBQ pork, shrimp, and mushrooms, mixing constantly and season with soy
sauce to taste. Add cooked rice, breaking it down with chopsticks or a spatula and heat
thoroughly. Add more soy if needed. Turn off the heat.
Add the lettuce and do a quick toss. Scoop the fried rice mixture into a serving bowl.
Chop up the omelet and scatter over the rice, sprinkle with diced green onions and
serve.
