Ho See Soong (Lettuce Wrap Filling)

                   Ho See (6 medium size dried oysters cleaned, dried, drained and sliced)
                   BBQ Pork (Chai Siu)
                   Celery
                   Bamboo Shoots
                   Water Chestnuts
                   Chinese Black Mushrooms
                   Soy Sauce
                   Oyster Sauce
                   Lettuce wrap – enough for filling

                   Equal amounts of BBQ Pork, Celery, Bamboo Shoots, Water Chestnuts and
                   Chinese Black Mushrooms (diced)

                   Heat 4 tablespoons of oil in pot or skillet.  Add 1 teaspoon of salt.  Add BBQ pork,
                   stir fry and add a little soy sauce.  Lower fire and add diced oysters, stir fry a few
                   times.  Add remaining ingredients and about 2 or more tablespoons of oyster
                   sauce.  Taste to see if proper amount of seasoning.  Cover and cook for about 5
                   minutes.

                   Serve with rice or add a tablespoon of into a piece of lettuce, roll and eat.
                   Iceberg lettuce can be a bit large and might need to be torn in half or trimmed.
                   Butter lettuce makes the perfect cup size and no trimming needed.
