Bok Gee Gai (Boiled Chicken)

                   1 whole chicken, including all parts (head, legs, butt)
                   2 tsp. salt
                   White Pepper
                   Black Pepper
                   4 quarts of water, or enough liquid to cover the chicken


                   Wash and drain dry the chicken. Salt inside and outside. Bring the water to a
                   boil, add the chicken and cover. Bring it to a boil again, then turn off fire and
                   replace cover of pot securely. Leave in pot for approximately 30 minutes.
                   Remove chicken and drain.

                   Serve chicken with finely chopped garlic, green onions, salt ginger and oil relish.
