               Tender	Greens	with	Steak	Cubes


               2 lbs Sirloin of beef, cubed (or FLANK STEAK)
               1 oz fresh ginger, chopped finely
               1 oz garlic chopped finely – 2 or 3 cloves
               1 tsp. green onions, chopped fine (about ½ a small green onion)
               ½ oz Chinese parsley, chopped finely
               1 tsp soy sauce
               1 tsp white wine
               Peanut Oil
               1 lb Chinese greens (washed and drained)
               Salt and Pepper
               A sprinkle of flour (about 1 tsp.)


               Marinate the beef cubes with the ginger, garlic, green onions, parsley, soy and white wine a
               minimum of 2 hours or more.  (I suggest to marinate overnight).  Heat the peanut oil in a wok or
               heavy skillet, and toss cook the greens lightly.  Add salt and pepper.  Remove to a warm serving
               platter.  Toss the marinated meat with a sprinkling of flour and salt.  Stir-fry the beef  till beef is
               done to your  preference degree of how well done you like.  Scoop beef over the bed of greens
               and serve at once.
