Nien Gao Recipe

                                              Ingredients:
                                              1 lb of Chinese cane brown sugar bars
                                              1 lb Glutinous Rice Flour
                                              2 cups of water
                                              1/4 cup of oil
                                              Sesame Seeds - In a separate pan, lightly toast the
                                              sesame seeds. Set aside sesame seeds.





                   Batter:
                         Boil 2 cups of water and add sugar bars. Stir until sugar bars are dissolved
                              o Cool the mixture either by letting it sit till cool, or place the sugar
                                 syrup into an ice bath to cool down quicker.


                         Empty the 1 lb package of Glutinous Rice Flour into a mixing bowl.
                         Slowly add sugar syrup to rice flour, stirring with a spoon or spatula until
                          smooth (will be Light brown mixture)
                         Add oil and stir till blended.


                   Cooking:
                         Set up a steamer with a rack that sits above the water to insure the pan
                          does not sit or touch the hot water. Bring water to a boil and lower
                          temperature to a simmer.
                         Grease a baking pan with Pam Spray or grease with oil.
                         Pour the batter into the greased pan and place pan into the steamer.
                         Steam at low temperature for 4 hours. Check the steamer (hourly) to
                          insure the steamer has enough water. Add water if low.
                         Check Nien Gao after 4 hours of steaming, by inserting a toothpick into
                          the center. If the toothpick comes out clean, then the Nien Gao is done.
                         After the cake is fully steamed, sprinkle the Nien Gao with the toasted
                          sesame seeds. Allow Nien Gao to cool about one hour before cutting into
                          it.

                   A Plastic Knife should be used to cut the Nien Gao into pieces. The Nien Gao
                   does not stick to a plastic knife as it does to metal knives.

                   Significance of Nien Gao for Chinese New Years
                   A traditional New Year dessert can be found in most households and usually
                   eaten to celebrate Chinese New Year. When family or friends drop by to "bi
                   nien", they are usually served a warm slice of this delicious dessert. Nien Gao
                   translates to "high year" or prosperous new year. Freshly made nien gao can be
